The capacitor is needed to stabilize the voltage and to reduce power spikes. When there is a change of the speed of the brushless motor, the esc receives a lot of voltage spikes( due to the black EMF effect ), this can cause a brownout of the voltage regulator for the microprocessor or for the gyroscope(which is very sensitive to voltage fluctuations).
